I used to buy a kale bunch then tear it into bite size pieces until I found bagged kale at Trader Joe's. This made the whole process A LOT faster. Aside from saving yourself the washing, drying and cutting, it takes half the time to crisp up in the oven since they're pre washed and dried.
Here's how I prepare them. First, empty about 1/4-1/3 of a bag of kale onto a baking sheet. It may look like a lot but they reduce in size once they're baked. Make sure not to crowd the sheet.
Lightly drizzle it with olive oil and the juice of half a lemon. Salt to taste, toss, then add a few extra touches of salt. Little secret- try using Himalayan pink crystal salt. It adds an extra kick and can also found at Trader Joe's.
Bake at 375 degrees for 10-12 minutes or until crisp.
Eat them quickly while they're nice and crisp or allow them to cool before plating.
